Basic Recipe For Pickled Onions (makes about 2x500g jars)
Ingredients
- 500g peeled pickling onions
- 1 tablespoon soft brown sugar (optional)
- Malt vinegar or pickling vinegar to cover. (Pickling vinegar often comes in large jars that you can use to store the onions in)
Basic method for pickling onions
- The pickled onions will retain their crunch longer if they are soaked in well salted water for 2 to 3 hours prior to pickling.
- Once soaked simply place the onions in sterilised jars, add the sugar and cover with the vinegar.
- Store the onions in a cool dark place for 4 weeks until they are ready to eat.
- The pickled onions should keep for up to a year.
Hot Chilli Spiced Pickled Onions
I call these spicy little gems 'blow your brains out pickled onions'!
You have to be a lover of chillies to attempt this one :-) The quantities are vague… it depends how brave you are!
Use the same basic recipe for pickling onions but as you are putting the onions in the jar mix in some whole chillies split lengthways, garlic cloves, peppercorns, dried red chillies, coriander seeds and fresh sliced ginger.
