A Hearty And Healthy Vegetarian Soup Recipe
This Leek And Potato Soup recipe is easy to make and one of my favourite homemade soup recipes when I am trying to eat healthily, cut down on the calories and lose weight! This soup is suitable for vegetarians, low in fat and low in calories if you don't add cream.
If you're not a vegetarian and you want to try something a little different try adding some chopped bacon to the leek and potato soup. I like to grill the bacon first so that it has some nice crispy bits on the edges, and I remove the fat so that it still makes a healthy bacon leek and potato soup!
The soup is really easy and quick to make, and cheap too, as it doesn't use lots of ingredients. I think that the addition of chilli makes for a nice, warming, healthy lunch or dinner, but you can just leave it out if you prefer not to have the extra heat.
The following gredients are enough for 2 portions of the leek and potato soup, but the ingredients can be easily doubled if you are extra hungry or have more mouths to feed.
low-fat cooking spray
1 leek, sliced finely
1 medium/large potato(about 100g), peeled and cubed
1/2 finely chopped medium onion
1 clove garlic, grated
1 finely sliced small chilli or to taste (de seeded)
1 vegetable stock cube,
1/2 pint hot water
150 ml skimmed milk
salt and pepper to taste
chopped coriander (cilantro) to garnish
How To Make The Leek And Potato Soup
Take a large saucepan and spray with a low calorie cooking spray such as 'Frylight'. The low fat cooking spray is especially important if you want to really cut down on your calories or you are following a diet plan.
Heat the pan and gently saute the leeks, onions, potatoes, garlic and chilli for about 10 minutes or until slightly softened.
Dissolve the stock cube in the hot water and add to the sauted vegetables, stir well and bring the mixture to the boil and the reduce the heat, cover and simmer gently for about 15 minutes.
Take a stick blender and blend the soup mixture in the pan for about 20 seconds, then stir in the milk and heat through.
Season with salt and pepper and garnish with a little chopped coriander (cilantro) and serve immediately.
