Easy Creamy Indian Aubergine Curry

I love aubergines but sometimes its difficult to know what to do with them! But I do think that aubergines, go really well in certain curries, and they work really well in this Indian aubergine curry and I quite frequently add them to my Lentil Curry to change it around a bit.

This  creamy aubergine curry recipe is delicious and its hard to believe that a good portion of this is quite low in calories, low in fat, satisfying and healthy! You could even cut back on the calories by using the lower fat Greek yoghurt!

This easy vegetarian curry recipe serves 4 but can easily be halved for two people. Serve it with basmati rice or mango chutney on the side.

It doesn't take many ingredients to make this healthy vegetarian curry!

  • 2 Onions roughly chopped
  • 4cm piece fresh root ginger, chopped
  • 4 tbsp toasted flaked almonds plus another tbsp for serving
  • 1tbsp curry powder
  • 1 clove garlic
  • Small bunch coriander (stalks and leaves separated)
  • 2 tsp olive oil
  • 2 Aubergines (Eggplant) chopped into large wedges
  • 200ml pot thick greek yoghurt (you can use the lower fat version if you want it to be even more healthy)

Method

​
  • Blitz the onions, garlic, ginger, 4 tbsp almonds, curry powder and coriander stalks until they make a paste (add a splash of water if necessary)
  • Heat the oil in your wok then fry the aubergine for around 5 minutes until browned. Scoop out the aubergine and set aside.
  • Add the onion paste and cook for a few minutes, stirring, until the onion softens.
  • Return the aubergine to the pan with the yoghurt and 400ml of hot water. Stir and simmer for 10 to 15 minutes until the aubergine is tender.
  • Season and serve over basmati rice and scatter with the coriander leaves and remaining almonds.
I have one of these Philips Compact food processors which is by far the easiest way to whizz up your ingredients into a paste, but if you are short on space or are using small amounts of ingredients then I recommend that you use one of these nifty hand blenders. This is without a doubt one of the handiest gadgets I have in my kitchen! I can honestly say that having had one for the past five years I wouldn't be without one now! They are so useful for making pastes, dressings and for chopping up smaller amounts of ingredients!
