Ingredients For Cabbage Soup
My recipe calls for chicken stock but if you want to make this a vegetarian soup then just use vegetable stock cubes instead.

Method
1. Heat the olive oil in a large non stick saucepan and add the onion and garlic. Stir and cook over a medium heat for about 5 minutes or until the onion is transparent.
2. Add the stock, tomatoes, salt and pepper then bring to the boil, now add the cabbage and celery. 3. Simmer for about 10 minutes and return to the boil, then simmer for a further 15 to 30 minutes, stirring often. 4. If you prefer a blended soup you can blend it in the pan using a stick blender, or serve just as it is if you prefer a chunkier texture to your soup. |
