When I was a child my mother always made pancakes on Shrove Tuesday, to me at the time it was quite exciting because Pancake Day, as I recollect, was the only day of the year when we had them. The pancakes were made for dessert and were always topped with lemon and sugar, and to this day, even though we are much more adventurous with pancake toppings and fillings, I still prefer the tangy sweetness of those simple pancakes from my child hood. My Mother's Easy Recipe For A Simple Lemon Pancake
The ingredients you will need to make these Shrove Tuesday pancakes are:
How to make these simple pancakes.
Sift the flour and salt into a bowl, add the egg and gradually beat in half of the milk.
Add the rest of the milk and beat the pancake mix until nice and smooth, then leave the batter to rest in the fridge for about half an hour before cooking the pancakes.
Heat a little oil in a non stick frying pan until it just starts to steam then pour in just enough pancake batter to cover the whole of the bottom of the pan as thinly as you can.
Cook for about 30 seconds before tossing, or turning, the pancake and cooking for a further 30 seconds on the other side.
Turn onto a warmed plate, sprinkle with lemon juice and sugar to taste and enjoy whilst they are still warm!

Cinnamon – lightly sprinkle ground cinnamon on top of the pancake. Nutella – this is sure to be a hit with the kids! In fact chocolate works well with pancakes, try crumbling a Cadbury's flake on top or sprinkling with cocoa powder! Ice Cream – plain vanilla or something more decadent. Custard – I haven't tried this but my sister's kids love it, especially with sliced bananas! Caramel Sauce – Gone are the days when you had to laboriously make your own caramel sauce, just buy a tin of Carnation Caramel Sauce and drizzle on top! Banoffee – Sliced bananas and some of the caramel sauce above makes a truly yummy topping for your pancakes. Crepes Suzette – This classic french recipe turns a simple pancake into something really special. Christmas Pudding Flavoured Vodka & Soaked Fruit – Pancakes are so good that they shouldn't just be reserved for Pancake Day... how about an alternative festive pancake using Christmas Pudding Flavoured Vodka and the soaked, dried fruit used to make it.... definitely one for the grown ups! |

Parmesan - delicious on savory pancakes. Butter – a classic and simple pancake topping which brings to life ordinary pancakes. Grand Marnier - This one is for the adults! Blue Cheese - I find Yorkshire blue a little less strong than some of the blue cheeses and it goes quite well with the sweetness of the pancake. Caviar - To be honest, I'm not sure that I fancy this one, it's an acquired taste, but it came up when we were brainstorming for ideas. Tomato salsa - You can make your own but you can get a perfectly acceptable jar of salsa from the supermarket (it's next to the Dorito's in ours), I would probably go for the hot salsa for a savoury pancake but choose a strength to suit your taste. Bacon - Smoky and grilled until nice and crispy, then crumbled on top perhaps finished off with a dollop of HP Sauce! Cream Cheese - I'm thinking a garlic flavoured cream cheese, like boursin, might be good with pancakes but there are plenty of different varieties to choose from. Marmite - Well I like it! Sweet Chilli Sauce - Again, you will readily find this on your supermarket shelves. Peanut Butter - I wasn't sure whether this would go with the sweet or the savoury pancake toppings but I guess it's savoury. Mango chutney - Sweetly spicy, you can make your own or simply buy a jar.
